Directions

Prepare

  1. Remove all bits of shell from the oysters and strain their liquor to remove shell and sand.

Make the broth

  1. In a pot, combine the oyster liquor with ½ cup of butter and bring to a boil.

  2. Skim off any scum that rises to the surface.

  3. Season with pepper and a little coarse sea salt, if desired.

  4. If using, add ½ cup of milk to the broth.

Cook and serve

  1. Once the broth is clear of scum, add the oysters.

  2. Remove from heat as soon as the edges of the oysters curl.

  3. Serve immediately.

What each ingredient does

Oysters
Provide the main ingredient, cooking gently until their edges curl and they turn tender.
Butter
Adds richness and a silky mouthfeel to the broth.
Milk
Adds creaminess and mild sweetness to the broth.
Cracker dust
Thickens the broth slightly as it absorbs liquid.

The step that matters

Remove from heat as soon as the edges curl. Oysters toughen and shrink when overcooked, so pulling the pot off heat at the first sign of curling keeps them tender and juicy.
