Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the butter and liquid into a smooth, cream-like sauce as it cooks.
Butter
Carries the flour and adds richness and a silky mouthfeel to the sauce.
Oyster liquor
Supplies the briny, oyster flavour that gives the sauce its character.
Turkey broth
Thins the roux to the desired consistency and adds savoury depth.
Oysters
Add their flavour and tender texture to the sauce when briefly cooked.

The step that matters

Stir in the flour until it bubbles. Cooking the flour in melted butter for a short time, a roux, removes raw starch taste and lets the flour thicken evenly once liquid is added. Adding liquid too early or skipping the cook leaves lumps or a pasty flavour.

Swap the white pepper

How well each one fits the dish's main ingredients (flour, butter, oyster, turkey):

  1. Sagefits better
  2. Nutmegfits better
