Roast Widgeon

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Pluck and singe the widgeons, then cut off the heads and claws.

  2. Draw the birds without breaking the entrails and wipe them with a wet cloth.

  3. Rub the birds all over with cold butter and dredge with flour.

Roast and serve

  1. Roast them in a hot oven at 400°F (200°C) for 15 minutes or bake at 350°F (175°C) for 20 minutes.

  2. Preserve all the gravy that flows from the birds.

  3. When nearly done, dust with salt and pepper.

  4. Serve hot with the gravy and currant jelly or orange essence.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Widgeons
Provide the main meat of the dish, cooked whole by roasting.
Cold butter
Rubbed on the birds to add fat, richness and browning as they cook.
Flour
Dredged over the birds to help form a browned, slightly crisp surface.

The step that matters

Roasting at the stated oven temperature. Widgeon is a small, lean bird that dries out quickly. A hot oven and a short time keep the meat juicy, so checking for doneness early matters.

Swap the currant
