Why it works: Sweet potato and pepper are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 1,015 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓
Stuffed Sweet Potatoes
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Bake the potatoes
Wash the sweet potatoes and bake them in a 350°F (175°C) oven until they begin to soften.
Remove the potatoes from the oven and cut a slice from one side of each potato.
Scoop out the inside of the potato with a teaspoon, being careful not to break the skin.
Stuff and serve
Place the scooped potato into a bowl and season it with salt and pepper.
Mix in the butter and then refill the potato skins with the mixture.
Replace the slice of skin on each potato and return them to the oven to heat thoroughly.
Serve the stuffed potatoes in their skins.

What each ingredient does
- Sweet potatoes
- Provide the starchy flesh that becomes the soft, sweet filling inside the skins.
- Butter
- Adds fat and richness, coating the potato flesh for a smoother, moister filling.
The step that matters
Scooping out the potato without breaking the skin. The skins act as edible serving shells and must stay intact to hold the filling. Scooping while the potato is still soft and warm lets the flesh come out easily, and a torn skin lets the filling leak during refilling and reheating.
