Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the sponge

  1. Mix mashed potato with lukewarm milk and melted lard or butter in a bowl.

  2. Dissolve the yeast and salt in the milk mixture.

  3. Add enough flour to create a thick batter that holds a drop from the spoon.

  4. Cover the bowl and let it rise in a warm place until light and foaming.

Shape the rolls

  1. Add more flour to make a stiff dough that doesn't stick.

  2. Knead the dough for five minutes.

  3. Roll the dough out to ½ inch thick.

  4. Cut out rounds with a biscuit cutter.

  5. Stack two rounds together.

  6. Place the stacked rounds on a buttered baking pan.

  7. Cover with a towel and let rise until doubled in size.

Bake and serve

  1. Brush the rolls with melted butter.

  2. Bake at 350°F (175°C) for about 20 minutes or until done.

  3. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potato
Adds moisture and starch that keeps the rolls soft and tender.
Compressed yeast
Ferments the dough, producing gas that makes the rolls rise and become light.
Lard or butter
Adds fat that tenderizes the crumb and richness to the dough.
Flour
Provides gluten and starch that form the structure of the rolls.
Milk
Hydrates the flour and yeast and adds softness and browning through milk sugars.

The step that matters

Let the sponge rise until light and foaming. The yeast needs warmth and time to ferment fully; under-proofed dough will bake dense, while the gas it produces is what lifts the rolls.

Swap the potato

How well each one fits the dish's main ingredients (milk, butter, flour):

  1. Potatothe original
  2. Arrowrootfits about as well
  3. Leekfits less well
  4. Shallotfits less well

Fit is the average pairing score against milk, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
