Raised Sweet-potato Bread

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Boil, peel, and mash enough sweet potatoes to yield 1 quart of pulp.

  2. Dissolve the yeast in the milk and add it to the mashed sweet potatoes.

  3. Stir in the salt, sugar, and boiling water, then mix in enough flour to make a thick batter.

  4. Cover the batter with a thick towel and let it rise in a warm place until it doubles in size.

  5. Once risen, mix in more flour to form a soft dough and knead for 5 minutes.

Shape and bake

  1. Grease three iron pans and fill each half full with the dough, then cover and let rise again until doubled.

  2. Bake in a moderate oven (350°F / 175°C) until the loaves are fully cooked.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet potatoes
Provide moisture and body, giving the bread a soft, tender crumb.
Yeast
Ferments the sugars and produces gas that makes the dough rise.
Flour
Forms the gluten network that gives the dough structure and holds its shape.
Milk
Adds moisture and richness, softening the crumb and aiding browning.
Sugar
Feeds the yeast and contributes sweetness and surface browning.

The step that matters

Letting the dough rise until doubled. Yeast needs a warm place and enough time to produce gas. Under-proofed dough bakes up dense, while over-proofed dough can collapse, so the dough should be allowed to double before shaping and again before baking.

Swap the sweet potato

How well each one fits the dish's main ingredients (milk, sugar, flour, butter):

  1. Arrowrootfits about as well
  2. Sweet potatothe original
  3. Potatofits about as well
  4. Leekfits about as well

Fit is the average pairing score against milk, sugar, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
