Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the almonds

  1. Blanch the almonds by pouring boiling water over them, then rub off the skins with a wet towel.

  2. Cut the blanched almonds into several pieces and place them in a pan in a 350°F (175°C) oven.

  3. Shake the pan occasionally until the almonds are very hot, but do not let them brown.

Make the nougat

  1. In a thick saucepan, combine the sugar and lemon juice over medium heat.

  2. Stir with a wooden spoon until the sugar melts and small bubbles form on the surface.

  3. Quickly add the hot almonds to the melted sugar and stir gently until well mixed.

Shape and set

  1. Pour the nougat onto an oiled slab or dish.

  2. Flatten and smooth it with half a lemon dipped in oil, working quickly as it hardens fast.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Blanched almonds
Provide the main body and crunch of the nougat.
Fine white sugar
Melts to form the chewy, set matrix that holds the almonds together.
Lemon juice
Adds acidity that helps keep the melted sugar from crystallising.

The step that matters

Shape the nougat quickly as it sets. Melted sugar cools and hardens fast, so it stiffens within moments. Spreading it promptly while still warm and pliable prevents uneven or brittle results.

Swap the lemon

How well each one fits the dish's main ingredients (almond, sugar, cream):
