What each ingredient does

Veloute sauce
Forms the thick, creamy base that holds the filling together.
Egg yolks
Add richness and help bind the mixture as it sets.
Lobster meat
Provides the main flavor and tender texture of the filling.
Button mushrooms
Add moisture and earthy body to the filling.
Cream
Adds richness and softness to the mixture.

The step that matters

Chilling until cold and firm. The mixture must set fully before shaping, because a soft filling will slump and burst through the bread crumbs when fried. Cooling allows the starch in the sauce and the egg yolks to thicken it enough to hold its shape.
