What each ingredient does

Egg yolks
Thicken the base and enrich it into a custard-like, creamy texture as they cook gently.
Whipped cream
Adds fat and air, giving the frozen soufflé a light, smooth texture.
Sugar syrup
Sweetens the mixture and keeps the frozen texture softer by limiting large ice crystals.
Raspberry juice
Provides the main fruit flavour and acidity, along with liquid for the base.
Chocolate drops
Adds flavour and richness, and sets into small pieces within the frozen mixture.

The step that matters

Whisking over hot water. The yolks must be heated gently while whisking so they thicken without scrambling. If the water is too hot or heating is uneven, the yolks can curdle, leaving a grainy base that will not freeze smoothly.
