What each ingredient does

Gooseberries
Provide the fruit pulp that forms the body of the relish.
Sugar
Adds sweetness and balances the sharpness of the vinegar and fruit.
Strong vinegar
Adds acidity that gives the relish its tang and helps preserve it.
Cornstarch
Thickens the relish to a catsup-like consistency when cooked.
English walnuts
Add texture and a rich, nutty flavor to the relish.

The step that matters

Boil the mixture for 1 hour. Long boiling evaporates water and concentrates the pulp, sugar and vinegar, so the relish thickens and keeps well. Too little cooking leaves it thin and watery.

Swap the walnut

How well each one fits the dish's main ingredients (pepper, vinegar, sugar):

  1. Sesamefits better
  2. Black-eyed peafits better
