Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cornmeal base

  1. Heat 1 quart of milk in a double boiler until boiling.

  2. Stir in 4 large kitchen spoonfuls of cornmeal and cook for 5 minutes, stirring constantly.

  3. Remove from heat and stir occasionally as it cools.

Bake and serve

  1. Once cool, add 3 beaten eggs, 2 tablespoons of flour, 1 tablespoon of butter, and a pinch of salt.

  2. Pour the mixture into a greased dish and bake at 350°F (175°C) for 35 minutes.

  3. Serve immediately with a napkin around the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and help it set firm as it bakes.
Cornmeal
Thickens the milk into a porridge-like base that gives the bread its body.
Milk
Provides the liquid that cooks the cornmeal and moistens the finished bread.
Flour
Adds structure so the baked mixture holds together when cut.
Butter
Adds fat for richness and a softer, more tender crumb.

The step that matters

Cooling before adding the eggs. Eggs added to very hot cornmeal mixture can scramble or cook unevenly, so the mixture should cool before the eggs go in, keeping the batter smooth and setting evenly in the oven.
