Potato Rolls

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. In the morning, mix the boiled potatoes, eggs, lard, yeast, sugar, and salt.

  2. When the mixture is light, add enough flour to form a dough and let it rise again.

Shape and bake

  1. Roll out the dough and cut it into cakes.

  2. Place the cakes in a pan, leaving space between them.

  3. Let the cakes rise again and bake at 400°F (200°C) for 8 to 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Boiled potatoes
Add moisture and starch that give the rolls a soft, tender crumb.
Eggs
Add structure and richness, helping the dough hold its shape and bake tender.
Lard
Adds fat that shortens gluten strands, producing a softer, more tender texture.
Yeast
Produces gas that makes the dough rise, giving the rolls their light texture.
Sugar
Feeds the yeast and adds sweetness and gentle browning in the oven.
Flour
Forms the gluten network that gives the dough its structure.

The step that matters

Letting the mixture become light before adding flour. Yeast needs time to ferment and build gas in the wet mixture; adding flour too early leaves the dough dense and under-risen.

Swap the potato

How well each one fits the dish's main ingredients (egg, sugar, flour):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Shallotfits better
  4. Potatothe original

Fit is the average pairing score against egg, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
