Sausage Dumplings
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Cook the sausages until thoroughly done, but do not brown them too much.
Roll out the crust and cut it into squares.
Place a sausage on each square and fold the corners over, pressing them together.
Place the dumplings in a pan and bake in a hot oven at 400°F (200°C) until the crust is done.
Serve on a hot plate and pour the sausage drippings, mixed with a little water, around the dumplings.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
