What each ingredient does

Cornmeal
Its starch swells and thickens as it cooks in boiling liquid, forming the mush.
Milk
Adds richness and a softer, creamier texture to the mush.

The step that matters

Stirring while the mush cooks. Cornmeal is dense and settles quickly, so it can stick and scorch on the bottom of the pot. Frequent stirring keeps heat even and prevents lumps and burnt flavor.
