What each ingredient does

Potatoes
Provide the starchy base that breaks down into a soft, fluffy mash.
Butter
Adds fat and richness, giving the mash a smooth, silky texture and flavour.
Milk
Adds moisture and loosens the mash to a creamy consistency.

The step that matters

Remove the water and let the steam evaporate before mashing. Excess water left in the potatoes dilutes the mash and makes it watery and loose. Letting the saucepan stand uncovered lets surface moisture evaporate, so the mash holds together better.

Swap the potato

How well each one fits the dish's main ingredients (butter, pepper, milk):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Tomatofits less well
  4. Asparagusfits less well

Fit is the average pairing score against butter, pepper, milk. Candidates are from the same food group and used in at least 100 recipes.
