Roast Meat or Fowl
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 400°F (200°C).
Grease a roasting pan with fat.
Place the meat in the pan and pour 2 to 3 tablespoons of water over it.
Roast the meat, turning and basting it continually.
Once done, strain the drippings through a strainer and serve with the meat in a sauce boat.
Keep the oven door slightly ajar for ventilation.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
