What each ingredient does

Tapioca
Thickens the soup as its starch swells during simmering.
Soup
Serves as the liquid base that the tapioca thickens.

The step that matters

Drop the tapioca in gradually while stirring. Tapioca added in a clump hydrates unevenly on the outside, forming lumps. Sprinkling it slowly into boiling liquid while stirring separates the granules so they swell evenly and the soup thickens smoothly.
