Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Boil the salsifis roots until tender, then cut them into slices.

  2. Stew the slices in ½ pint of good white sauce with 1 tablespoon of anchovy.

Assemble and bake

  1. Layer the mixture in shells with breadcrumbs in between.

  2. Dot small pieces of butter on top and sprinkle breadcrumbs over the whole.

  3. Season with pepper and bake in a 400°F (200°C) oven until browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salsifis roots
Provide the main body and tender texture of the dish.
White sauce
Binds the salsify slices and keeps them moist during baking.
Anchovy
Adds a savoury, salty depth to the sauce.
Breadcrumbs
Form a crisp, golden topping when baked.
Butter
Adds richness and helps the top brown.

The step that matters

Bake until browned. Baking long enough lets the surface crust and brown, which gives contrast to the soft, creamy filling. Underbaking leaves the topping pale and the sauce loose.
