Scalloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dish

  1. Butter a baking dish and cover the bottom thickly with pounded crackers.

  2. Wet the crackers with oyster liquor and a few spoonfuls of cream.

Layer and bake

  1. Layer oysters closely over the crackers, seasoning with pepper and salt, and dot with butter.

  2. Add another layer of crumbs, wet as before, and repeat with more oysters until the dish is full.

  3. Finish with a top layer of crumbs dotted with butter.

  4. Cover the dish with a plate or tin pan and bake at 400°F (200°C) until the juice bubbles up.

  5. Uncover and place on the upper rack of the oven to brown.

Serve

  1. Serve in the baking dish with sliced lemon on the side.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main filling, releasing their juices that moisten the crumbs as they cook.
Pounded crackers
Form the structure of each layer and soak up the oyster liquor and cream.
Cream or rich milk
Adds moisture and richness, helping the crumb layers turn tender and creamy as they bake.
Butter
Adds fat and flavor, and helps the top brown in the oven.

The step that matters

Covering the dish before baking. The cover traps steam so the oysters cook through and the juice bubbles up before the top over-browns. Browning is left until after uncovering, when the surface can color properly.
