Beehive Sauce

Ingredients

Directions

Make the sauce

  1. Cream the butter and sugar together until smooth.

  2. Set aside 3 tablespoons of the mixture to color.

  3. Add lemon juice and nutmeg to the larger portion and mix well.

  4. Whip in currant jelly or cranberry syrup to the reserved mixture until it turns a rich pink.

Decorate and serve

  1. Shape the white sauce into a conical mound on a serving plate.

  2. Roll a sheet of notebook paper into a funnel and secure it with string.

  3. Fill the funnel with the colored sauce and squeeze it gently through the small end, starting at the base and winding up to the top.

What each ingredient does

Butter
Creams with sugar to form the smooth, rich base of the sauce.
Sugar
Creams with butter to give the sauce its sweetness and smooth body.
Currant jelly or cranberry syrup
Adds fruity flavor and the pink color to the reserved portion.

The step that matters

Whip in the currant jelly or cranberry syrup. Adding the fruit to only the reserved portion, and whipping until evenly combined, gives a uniform rich pink. Unmixed or overmixed streaks can change the color and texture of the piping sauce.
