The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Forms the gel that sets the jelly into a firm, sliceable body.
Sugar
Adds sweetness and balances the sharpness of the lemon juice.
Lemon juice
Provides acidity and the bright lemon flavour of the jelly.
Pale sherry
Adds aroma and a mellow, wine-based flavour to the lemon base.

The step that matters

Strain through the flannel bag without pressing. Squeezing the bag pushes cloudy solids and bits of pulp through, which makes the jelly murky. Letting it drip keeps the set jelly clear and bright.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, sherry):

  1. Vanillafits better
  2. Figfits better
  3. Pineapplefits better
