Transparent Puddings

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. Preheat the oven to 350°F (175°C).

  2. Cream together butter and sugar.

  3. Beat in the yolks of 6 eggs, lemon juice, lemon rind, nutmeg, and brandy.

Line and bake the shells

  1. Roll out the pastry and line the tart pans with it.

  2. Bake the shells until nearly done.

Top and chill

  1. Whip the reserved egg whites with a little powdered sugar to make meringue.

  2. Spread the meringue on top of the puddings and lightly color it.

  3. Chill the puddings before serving.

What each ingredient does

Eggs
Yolks thicken the filling and set it, while whites whip into the meringue topping.
Butter
Adds fat and richness, giving the filling a smooth, tender texture.
Sugar
Sweetens the filling and helps the meringue hold its structure and brown lightly.
Lemon juice
Adds acidity that brightens the filling and balances its sweetness.
Brandy
Contributes aroma and warmth to the filling.
Nutmeg
Adds a warm, aromatic spice note to the filling.

The step that matters

Lightly color the meringue. Meringue is whipped egg white and sugar, which can toughen, weep, or scorch if overbaked. Browning only lightly keeps it tender and sweet while still giving color.
