What each ingredient does

Mock-turtle soup
Forms the base of the dish, supplying most of the liquid and body of the soup.
Curry powder
Adds the spiced flavour and aroma that define the soup.

The step that matters

Stirring the curry mixture into the nearly boiling soup. Mixing the curry powder with cold water first helps it disperse instead of clumping. Stirring it into hot soup spreads the spices evenly, and the brief heating softens the raw, dusty taste of the powder.
