Scalloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Butter a pudding dish and sprinkle the bottom with rolled crackers.

  3. Wet the crackers with oyster liquor and warmed milk.

Layer and bake

  1. Layer oysters closely on top, then sprinkle with pepper, salt, bits of butter, and lemon juice.

  2. Add another layer of moistened crumbs and repeat until the dish is full.

  3. Finish with a top layer of crumbs and dot with butter.

  4. Cover and bake for 30 minutes, then uncover and brown quickly.

What each ingredient does

Oysters
Provide the main flavour and texture of the dish as the layered filling.
Rolled crackers
Soak up the liquid and form soft, absorbent layers that hold the dish together.
Oyster liquor
Moistens the crumbs and adds briny, savoury flavour throughout the layers.
Milk
Adds moisture and richness, softening the crumbs into a creamy binder.
Butter
Adds fat that enriches the dish and helps the top brown during final baking.

The step that matters

Uncover and brown quickly. Covering keeps the oysters moist and cooks them gently. Browning uncovered at the end sets the surface and develops colour, but prolonged exposure can dry the crumbs and toughen the oysters.
