Veal Pate's

Ingredients

Directions

  1. Chop the leftover veal and crisped ham, reserving some for salad.

  2. Season the meat well and warm up the gravy after removing the fat.

  3. Mix a little oyster liquor into the gravy and stir in the minced meat.

  4. Heat the mixture almost to boiling, then cover and keep warm.

  5. Line the pans with reserved pastry from Saturday and butter the tins well.

  6. Bake the pastry shells until golden, then slip them out while hot.

  7. Arrange the shells on a warm dish and fill with the meat mixture.

  8. Sprinkle the tops with fine dry crumbs and place in the oven for a minute before serving.
