What each ingredient does

Clams
Provide the main flavor and body of the soup.
Butter
Adds richness and a smooth, rounded mouthfeel to the broth.
Cracker dust
Thickens the soup lightly when rolled into the butter and stirred in.
Milk
Adds creaminess and mellows the saltiness of the clam broth.
Lemon juice
Adds acidity that brightens the clam flavor.

The step that matters

Bring to a slow boil, then skim and strain. Boiling the clam liquor too hard can make it cloudy and tough, and skimming removes foam and grit. Straining gives a clear, smooth broth before the clams and butter go in.

Swap the celery

How well each one fits the dish's main ingredients (clam, pepper, butter, lemon, milk):

  1. Parsleyfits better
  2. Thymefits better
  3. Marjoramfits about as well
  4. Celerythe original

Fit is the average pairing score against clam, pepper, butter, lemon, milk. Candidates are from the same food group and used in at least 100 recipes.
