Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the rolls

  1. Cut off the top of each roll.

  2. Carefully remove the crumb.

  3. Place the hollowed rolls and their tops in a 300°F (150°C) oven to dry until crisp.

Prepare the asparagus

  1. Boil the asparagus for 20 minutes.

  2. Cut off the green tops of the asparagus.

  3. Let the asparagus cool completely.

Make the filling

  1. Heat the milk.

  2. Stir in the butter.

  3. Pour the mixture over the beaten egg yolks.

  4. Whisk the mixture for one minute.

  5. Return the mixture to the heat.

  6. Add minced asparagus tops.

  7. Stir until hot but not boiling.

Assemble and serve

  1. Fill the rolls with the mixture.

  2. Create a round hole in the top of each crust cover.

  3. Insert a whole asparagus top into each hole.

  4. Place the cover back on the roll.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the milk mixture into a smooth, creamy filling as they gently set with heat.
Milk
Forms the liquid base of the custard filling, carrying the egg yolks and butter.
Asparagus
Provides the main flavour and the green filling and garnish of the rolls.
Stale french rolls
Form the edible containers; their dry, crisp structure holds the filling.

The step that matters

Stir in the hot but not boiling. Egg yolks thicken the custard as they heat, but if the mixture boils they can curdle and turn grainy. Heating gently and stirring keeps it smooth and creamy.

Swap the asparagus

How well each one fits the dish's main ingredients (egg, milk, butter, flour, pepper):

  1. Capsicumfits about as well
  2. Potatofits about as well
  3. Asparagusthe original
