Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rib roast
Provides the main cut of meat that is rolled, roasted and sliced for serving.
Vinegar
Washed over the meat, adding a slightly sharp, acidic note to the surface.
Butter
Adds fat that carries flavor, moistens the meat and helps the surface brown.
Onion
Adds aromatic flavor to the butter rub worked into the meat.
Flour
Coats the meat to help form a browned crust and later thickens the gravy.

The step that matters

Rub with butter to create a brown crust. Browning relies on the Maillard reaction, which needs a dry, fairly hot surface. Excess moisture on the meat steams it instead, so the crust stays pale.

Swap the onion

How well each one fits the dish's main ingredients (vinegar, butter, pepper, flour):

  1. Shallotfits better
  2. Capsicumfits better
  3. Mustardfits better
  4. Onionthe original

Fit is the average pairing score against vinegar, butter, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
