What each ingredient does

Fresh green corn
Provides the sweet kernels that are the main substance of the dish.

The step that matters

Cook in salted boiling water for 25 to 30 minutes. Boiling cooks the kernels through and softens them; overcooking makes them tough and starchy, while undercooking leaves them firm and raw-tasting. Timing by the kernels' tenderness matters more than the clock.
