Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Provide the main body of the dish, becoming tender and mildly sweet when fried.
Flour
Forms a light coating that browns in the hot fat and gives a crisp exterior.
Oil or butter
Conducts heat to the slices and fries the coating to a golden colour.

The step that matters

Patting the slices dry before dredging. Surface water makes the flour clump and steam instead of forming an even coating, so the slices fry less crisp and the coating may slide off in the pan.

Swap the cucumber

How well each one fits the dish's main ingredients (pepper, flour, butter):

  1. Shallotfits better
  2. Chivefits better
  3. Capsicumfits better
  4. Cucumberthe original

Fit is the average pairing score against pepper, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
