Ingredients

Directions

Prepare

  1. Clean and wash the ducks.

  2. Stuff one duck with sage and onion, and the other with ordinary poultry dressing.

  3. Place the ducks in a roasting pan and pour 1 cup of boiling water over them.

Roast and make the gravy

  1. Roast the ducks, basting often, for about 12 minutes per pound, unless they are very young and tender.

  2. Remove the ducks from the oven, strain the gravy, and remove the fat.

  3. Season the gravy and thicken it with browned flour, then pour it into a serving boat.

What each ingredient does

Ducks
Provide the main meat, whose fat renders and bastes the bird as it roasts.
Browned flour
Thickens the strained pan juices into a smooth, body-rich gravy.
Sage
Adds a savoury, herbal aroma to the stuffed bird.
Onion
Adds aromatic sweetness and moisture to the stuffing inside one duck.

The step that matters

Roast the ducks, basting often. Basting spreads the rendered fat and pan liquid over the skin, helping it brown and stay moist. Cooking time depends on weight and tenderness, so the birds must be checked rather than trusted to the clock alone.

Swap the onion

How well each one fits the dish's main ingredients (sage, flour, pepper):

  1. Parsnipfits better
  2. Kalefits better
  3. Turnipfits better
  4. Onionthe original

Fit is the average pairing score against sage, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
