Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Form the bulk of the croquette and give a soft, tender interior.
Eggs
Bind the potato mixture so the croquettes hold their shape.
Rolled crackers
Form a crisp, golden coating that browns during frying.
Dripping
Fat for frying that browns the outside and adds rich flavour.

The step that matters

Keep stirring until the mixture is very hot. Heating the potato mixture in the hot fat drives off moisture and cooks the starch, so the mixture firms up. If it stays wet, the croquettes can slump or crack during shaping and frying.

Swap the potato

How well each one fits the dish's main ingredients (pepper, nutmeg, egg):

  1. Spinachfits better
  2. Capsicumfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against pepper, nutmeg, egg. Candidates are from the same food group and used in at least 100 recipes.
