Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potato mixture

  1. Mash the potatoes thoroughly.

  2. Beat in the butter, milk, and two raw eggs until light.

  3. Heat the mixture in a greased frying pan, stirring constantly, until stiff enough to handle.

Shape and bake

  1. Shape into a long roll and brush with the beaten egg.

  2. Sift breadcrumbs over the roll.

  3. Place in a buttered baking pan and brown in a 400°F (200°C) oven.

Serve

  1. Serve with a cup of good drawn butter poured over it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Form the bulk of the roll and give it a soft, tender body.
Raw eggs
Bind the mixture and set it so the roll holds its shape.
Butter
Adds richness and flavour and keeps the mixture moist.
Milk
Loosens the potato mixture and adds moisture for a smooth texture.
Breadcrumbs
Form a crisp coating that browns in the oven.
Drawn butter
Adds richness and moisture when poured over the finished roll.

The step that matters

Heating the mixture until stiff. Stirring constantly keeps the eggs and starch from catching or scorching on the pan. The mixture must thicken enough to hold a shape, otherwise the roll will slump or break apart when shaped and baked.

Swap the potato

How well each one fits the dish's main ingredients (butter, milk, egg):
