Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 400°F (200°C).

  2. Rub the butter and powdered sugar together until creamy.

  3. Beat in the egg yolks, milk, flour, and then the egg whites.

  4. Quickly mix in the lemon juice and peel.

Bake and serve

  1. Pour the batter into buttered corn-bread pans or patty pans.

  2. Bake until golden, then turn out and serve hot with sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and lift, setting the puffs as they bake.
Flour
Forms the structure that holds the puffs once set.
Butter
Adds richness and tenderness to the crumb.
Powdered sugar
Sweetens the batter and helps it cream smoothly with the butter.
Milk
Adds moisture so the batter pours and bakes evenly.
Lemon
Adds acidity and aroma from the juice and grated peel.

The step that matters

Quickly mix in the lemon juice and peel. Lemon juice is acidic and can deflate the whipped egg foam and batter structure if overworked. Folding it in briefly keeps the air in the batter, so the puffs rise well in the oven.
