Why it works: Apple and lemon are a kitchen classic. They rank in the top 14% of all ingredient pairs, and cooks put them together in 7,551 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Apple Jelly
Ingredients
Directions
Prepare the apples
Pack the peeled and cored apples into a stoneware or glass jar with ½ cup of cold water.
Cover loosely to allow steam to escape, then set the jar in a pot of warm water.
Heat slowly and boil until the apples are very soft.
Make the jelly
In a bowl, combine the soaked gelatine, powdered sugar, lemon juice, and grated lemon peel.
Strain and squeeze the hot apples over the mixture, stirring until the gelatine is dissolved.
Strain again through a flannel bag.
Set and serve
Wet a mold and pour the mixture into it.
Refrigerate until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Apples
- Provide the pectin and body that give the jelly its structure and flavor.
- Gelatine
- Sets the liquid into a firm, sliceable jelly as it cools.
- Powdered sugar
- Sweetens the jelly and balances the tartness of the apples and lemon.
- Lemon juice
- Adds acidity that brightens the flavor and supports the set.
The step that matters
Strain and squeeze the hot apples over the mixture, stirring until the gelatine is dissolved. The gelatine must fully dissolve into the hot liquid; undissolved granules leave gritty spots and weak setting. Stirring while the liquid is warm helps it disperse evenly before it cools and sets.
