Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a light, wobbly structure as it cools.
Egg whites
Whipped stiff, they add airy foam and a light, fluffy texture.
Powdered sugar
Sweetens the dessert and dissolves smoothly into the juice mixture.
Orange juice
Provides the main flavour, plus acidity and aroma from the peel.

The step that matters

Whipping the gelatine into the egg whites. The mixture must be cold and only just beginning to congeal. If it is too warm, it deflates the whipped whites; if it is fully set, it will not blend smoothly into the foam.

Swap the orange

How well each one fits the dish's main ingredients (lemon, egg, sugar):

  1. Orangethe original
  2. Vanillafits about as well
  3. Limefits less well
  4. Raisinfits less well

Fit is the average pairing score against lemon, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
