Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carp
Is the main protein, cooked gently in liquid until it becomes tender and flaky.
Butter
Adds richness and fat, and the flour coating helps thicken the stewing liquid.
Cream or rich milk
Adds richness and body, giving the stewing liquid a smoother, creamier texture.

The step that matters

Cover and stew gently. Fish protein sets and toughens when overheated, so the carp should simmer gently under a cover rather than boil hard. Gentle heat keeps the flesh moist and tender.

Swap the mace

How well each one fits the dish's main ingredients (pepper, parsley, onion, marjoram, cream, butter, flour):

  1. Thymefits better
  2. Tarragonfits better

  4. Macethe original

Fit is the average pairing score against pepper, parsley, onion, marjoram, cream, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
