What each ingredient does

Coral meat of lobster
Gives the dressing its rich lobster flavour and colour.
Sweet oil
Adds fat and smoothness, carrying flavour through the dressing.
Prepared mustard
Adds sharpness and helps the oil and vinegar blend into a smooth emulsion.
Vinegar
Adds acidity that brightens the dressing and balances the rich oil.
Minced lobster meat from body and claws
Provides the main body and texture of the dressing.

The step that matters

Combine the two mixtures, then add vinegar and mix until smooth.. Oil and vinegar separate easily, so the mustard must be fully blended in first and the vinegar added gradually while mixing to form a smooth, stable emulsion.

Swap the parsley
