Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobster
Provides the main body of the dish, with tender meat that is cooked gently in the cream.
Cream
Forms the rich sauce that surrounds the meat and keeps it moist during slow stewing.
Egg yolk
Thickens the cream into a smoother, richer sauce when stirred in near the end.

The step that matters

Stirring in the egg yolk. Egg yolk thickens when heated gently. Adding it just before serving, off the boil, keeps the sauce smooth rather than letting it scramble or curdle.
