Pickled Lobster

Ingredients

Directions

Prepare the lobster

  1. Boil the lobsters in salted water until cooked.

  2. Remove the meat from the shells, keeping claw meat whole and cutting body meat into large pieces.

Make the pickle

  1. Season vinegar with peppercorns, cloves, and mace.

  2. Place lobster pieces in a stew‑pan and cover with seasoned vinegar.

  3. Boil for 5 minutes, then remove the lobster and boil the vinegar alone for 15 minutes.

Cool, store and serve

  1. Let both the pickle and lobster cool, then combine in a broad flat stone jar.

  2. Cover tightly and store in a cool place.

  3. Serve with oil, mustard, vinegar, and bread and butter.

What each ingredient does

Lobsters
Provide the main meat, which firms slightly and turns opaque when cooked.
Vinegar
Acidity preserves the lobster and gives the pickle its sharp, tangy flavour.
Whole peppercorns
Release aromatic oils into the vinegar, adding gentle heat and spice.
Whole cloves
Infuse warm, aromatic spice into the vinegar during boiling.
Whole blades of mace
Add a delicate, warm aroma to the seasoned vinegar.

The step that matters

Boiling the lobster in salted water until cooked. Overcooking toughens lobster protein and makes the meat rubbery, while undercooking leaves it unsafe. Cooking until just opaque keeps it tender before pickling.

Swap the mace

How well each one fits the dish's main ingredients (lobster, vinegar, clove):

  1. Tarragonfits better
  2. Allspicefits better
  3. Gingerfits better
  4. Macethe original

Fit is the average pairing score against lobster, vinegar, clove. Candidates are from the same food group and used in at least 100 recipes.
