Tapioca Pudding

Why it works: Lemon and nutmeg match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 11,318 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

The book says “a steady oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Soak the tapioca in warm water for 5 to 6 hours until soft.

  2. Peel and core the apples, then fill them with sugar, lemon juice, and nutmeg.

Bake and serve

  1. Pour the soaked tapioca around the apples in a baking dish and sprinkle nutmeg on top.

  2. Bake at 400°F (200°C) for 1 hour.

  3. Serve with cream and sugar.

What each ingredient does

Tapioca
Swells as it soaks and thickens the liquid around the apples into a pudding-like texture.
Apples
Soften as they bake and provide the main fruit body and sweetness of the dish.
Sugar
Adds sweetness and helps the apples caramelize slightly at the edges while baking.
Lemon juice
Adds acidity that brightens the sweetness of the apples and balances the dish.

The step that matters

Soaking the tapioca. Tapioca pearls must hydrate fully before baking; if they stay firm, the pudding will have hard, chalky bits instead of a smooth, tender texture.

Swap the apple

How well each one fits the dish's main ingredients (sugar, lemon, nutmeg, cream):

  1. Vanillafits better
