Ingredients

Directions

Prepare the sponge

  1. Dissolve the sugar in lukewarm water.

  2. Sift the flour.

  3. Mash the cooked potatoes and rub them through a colander.

  4. Mix the mashed potatoes with enough flour and hot potato water to make a sponge thicker than pancake batter.

  5. When lukewarm, stir in the yeast and salt.

  6. Place the sponge in a pan of lukewarm water to maintain a uniform heat until it rises.

Make and shape the dough

  1. Add melted lard and enough flour to form a soft dough.

  2. Knead the dough on a floured surface for 20 to 30 minutes.

  3. Shape the dough into loaves.

Rise and bake

  1. Let the loaves rise again.

  2. Bake the loaves until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Add moisture and starch that keep the bread soft and tender.
Flour
Forms the gluten network that gives the dough structure and chew.
Yeast
Produces gas that makes the sponge and loaves rise.
Melted lard
Adds fat that softens the crumb and tenderizes the texture.
Sugar
Feeds the yeast and helps the loaves brown when baked.

The step that matters

Kneading the dough for 20 to 30 minutes. Kneading develops gluten so the dough can trap gas. Too little kneading leaves a dense loaf, while the dough should stay soft rather than stiff.

Swap the potato

How well each one fits the dish's main ingredients (sugar, flour):

  1. Arrowrootfits better
  2. Beetrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
