What each ingredient does

Eggs
Bind the custard and help it set into a soft, sliceable pudding when baked.
Corn starch
Thickens the milk so the custard holds its body instead of running.
Fresh butter
Adds richness and a smooth, tender mouthfeel to the custard.
Noodles
Form the bulk of the pudding and soak up the custard as it bakes.
Grated apples
Add moisture and a tart fruity flavor that contrasts with the sweet custard.

The step that matters

Stir the eggs into the milk after removing it from the heat. Adding beaten eggs to very hot milk can scramble them into lumps. Cooling the mixture slightly first lets the eggs blend smoothly and thicken evenly.

Swap the apple

How well each one fits the dish's main ingredients (milk, butter, corn, egg, sugar, nutmeg):

  1. Vanillafits better
  2. Coconutfits better
