Quails, Roasted

Ingredients

Directions

Prepare

  1. Wash the quails in cold water and dry them with a napkin.

  2. Season the inside of each quail with a pinch of salt and pepper.

Brown and cook

  1. Heat the butter in a Dutch oven or deep skillet over medium heat until hot enough to brown.

  2. Add the quails and 6 crushed juniper berries for each one, then cover and brown on both sides.

  3. Baste the quails with hot water from time to time while cooking slowly for 30 minutes.

Make the gravy and serve

  1. Once cooked, remove the quails and add ½ cup of hot water to the gravy, stirring from the bottom.

  2. Let the gravy boil for a few minutes, then strain it before serving.

What each ingredient does

Quails
Provide the main protein, which cooks through and browns during the slow covered cooking.
Fresh butter
Conducts heat for browning the quails and adds richness to the pan juices.
Juniper berries
Add a resinous, aromatic flavour that infuses the quails and gravy.

The step that matters

Browning the quails on both sides. Browning depends on the pan being hot enough before the quails go in, and on the Maillard reaction creating flavour on the surface. Crowding or low heat leads to steaming and pale, flat skin.
