Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Curd Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Strain the whey from the curds.

  2. In a bowl, combine curds, salt, and cream; rub together until smooth.

  3. Beat the egg yolks with sugar and stir into the curd mixture.

  4. Add raspberry syrup and mix well.

  5. Beat the egg whites with 2 teaspoons of sugar until stiff, then fold into the mixture.

Bake

  1. Pour into a buttered deep pie plate lined with puff pastry.

  2. Bake at 400°F (200°C) for about 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Curds
Form the body of the filling, giving a soft, set, custard-like texture.
Eggs
Bind the filling and, as whipped whites, lighten its texture and help it rise and set in the oven.
Thick sweet cream
Adds richness and fat, making the filling smoother and more tender.
White granulated sugar
Sweetens the filling and helps browning on the pie surface.
Raspberry syrup
Adds sweetness, moisture and fruity flavour to the filling.

The step that matters

Folding in the egg whites. Stiffly beaten whites trap air that gives lift; overmixing or deflating them while folding makes the filling dense and less airy after baking.

Swap the raspberry

How well each one fits the dish's main ingredients (cream, sugar, egg, syrup):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Strawberryfits about as well
  4. Raspberrythe original

Fit is the average pairing score against cream, sugar, egg, syrup. Candidates are from the same food group and used in at least 100 recipes.
