Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice flour
Its starch thickens the hot milk into a smooth, set pudding.
Milk
Forms the liquid base that the rice flour thickens into the pudding body.
Sugar
Adds sweetness and helps balance the flavor of the pudding.
Lemon extract
Adds a bright citrus aroma to the pudding.

The step that matters

Stir constantly until thickened. Starch in the rice flour can clump or scorch on the bottom of the pan if left unstirred. Constant stirring keeps the mixture smooth as the starch swells and thickens the milk.
