Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard, while whipped whites add lightness to the finished dessert.
Corn starch
Gelatinizes when heated, thickening the custard so it holds its shape.
Almonds
Provide the nutty flavor and body that define the custard.
Rich sweet milk
Forms the liquid base that the thickeners set into a smooth custard.
White granulated sugar
Sweetens the custard and helps stabilize the whipped egg whites.

The step that matters

Cooking the egg yolks until thickened but not boiling. Yolk proteins set with gentle heat; if the custard boils it can curdle or turn grainy, so it must be heated slowly and stopped once thick.
