Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the sauce and balances the sharpness of the lemon.
Butter
Adds fat for a smooth, rich mouthfeel.
Lemon juice
Provides acidity and bright lemon flavour.
Egg yolks
Thicken the sauce and add richness as the custard sets.
Egg whites
Folded in whipped, they add lightness and an airy texture.

The step that matters

Beat in the egg yolks off the heat. Adding yolks to a very hot mixture can scramble them into lumps. Removing the pan from the heat first lets the yolks thicken the sauce gently and evenly.
