Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Provide the main fruit flavor and body of the sherbet.
Sugar
Sweetens the sherbet and lowers its freezing point for a softer texture.
Gelatin
Adds body and helps the sherbet hold a smooth, stable texture.
Egg white
Whipped into the partly frozen mixture to add lightness and air.
Lemon juice
Adds acidity that brightens the peach flavor.

The step that matters

When partly frozen, stir in the beaten egg white. Adding the egg white too early or to fully frozen mixture prevents it from folding in evenly, so the sherbet stays dense rather than light and airy.

Swap the peach

How well each one fits the dish's main ingredients (sugar, gelatin, lemon, egg):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits about as well
