What each ingredient does

Sausage
Provides the main protein and fat, which renders out and helps the cakes brown in the pan.
Hot water
Cooks the sausage gently first, then forms a simple pan liquid to serve with it.

The step that matters

Pour off the grease and brown the sausage. Once the water has evaporated, the sausage fat is released into the pan. Pouring it off before browning keeps the cakes from frying in grease, letting the surface brown and develop colour instead of becoming greasy.
